What's For Dinner?

foTonight at our house is Chinese Casserole. This quick & yummy dinner is one the whole family enjoys. We always have onions and celery in the fridge and all the others are staples I keep on hand for this recipe. I thawed and browned extra burger for tomorrow night's dinner Baked Penne. Since I work on Tue/Thur, I try to have those meals ready to bake or use the crock pot those days. This one is super easy and the kids love it!

Chinese Casserole
1 1/2 lb burger, browned
1 small onion, chopped
1 c. raw brown or white rice
1 c. celery, chopped
1 can bean sprouts
1 can water chesnuts (optional)
1 can bamboo shoots (optional)
1 can mushroom pieces (optional)
1 Tbsp. Soy Sauce - to taste
2 cups water or sprout juice to equal 2 cups
1 can cream of chicken soup
1 can cream of mushroom soup
1-2 cups Chinese noodles (optional)

Brown burger and onion. Stir together the veggies, rice, water, soy sauce and soups. Mix everything together and bake covered for 45 min at 350', then uncovered for another 30-45 minutes until rice is tender. Top with Chinese noodles the last 15 minutes.
Weight Watchers = 5 points/cup

Baked Penne

1 box (12 oz) whole wheat pasta- penne, ziti, macaroni or other thick noodle
1 can (26 oz) spaghetti sauce
1 1/2 lb burger
1/2 onion
1/2 cup grated parmasean cheese
1 cup grated mozzerella cheese

Cook noodles as directed. Brown burger with onion. Mix cooked noodles and burger together with sauce and cheese. Top with another sprinkle of Parmesean and bake at 350 ' for 20-30 minutes until cheese is bubbly.
Weight Watchers= 6 points/cup
